Lili Tuver's Traditional Gujarati 'Dhokali Recipe'.

    (A). Preparation To Cook 'Dhokali Recipe'.

    Take three things that are Lili Tuvar(Green Pigeon Peas), Peanuts, and Tuvar dal in one bowl and wash it properly two-three times.

    Now add 2 glasses of pure water into the cooker and add that soaked ingredients into the cooker. Cover the cooker with a lid.

    Pressure cook for 6 whistles at high flame. Then Switch off the flame.

    'Dhokali Recipe'

    STEP1

      • During this period of time, start making Raw Dhokali's Dough as shown in the picture. For that take all flours in one Katharot(a circular plate), and mix it properly.
      • Add 1 tbsp oil to it and again mix it.
      • Add ½ of all spices ingredients in it such as 1½ tsp green paste, ½ of garlic paste, ½ tsp turmeric powder, ½ tsp salt, ½ tsp spices seeds powder, and ½ tsp of hot spices powder into the flour mixture and knead flours nicely. See the picture.

      STEP2

      • Now, take small pieces from the kneaded dough and make the loaves of dough, as shown in the picture.

      • After that, make a round shape of that small loaves with help of fingers.  See the picture. (there is no need to roll out the bread).

      • Up to that the pressure of the cooker settles down on its own and opens the lid.
      • Now add 2 glasses of pure water into the cooker, add all remaining ingredients except coriander leaves, and let it boil and slow gas flame.

      STEP5

      • Take tadka pan, put it on the next gas burner, and pour the remaining oil in it.
      • After heating oil, add mustard seeds, and dry red chili. When it starts crackling, add asafetida, and add this tadka into the cooker. Mix it well.

      STEP6

      • Now add all small Dhokali into the cooker, stir it well, and let it cook in an open cooker for five minutes. After five minutes stir it.
      • Again, cook it for another five minutes and at last add coriander leaves to it.
      • So, at all Dhokali Recipe is ready to serve. 
      • Take it in a serving bowl and enjoy eating.
