  • Green Kantola Or Spiny Gourd are green in colors, with the green soft spiny surface.
  • After ripen it become light yellows in color, which is a little bitter in taste. So people like to buy a green color or a little bit light in green colors' Kantola.

  • It is also known as Spiny Gourd, Teasle Gourd, Momordica Dioica(botanical name), prickly carolaho, Kokoda, Kakrol, etc.

How to make a "Green Kantola Recipe"?


INGREDIENTS

Kantola(Spiny Gourd)

Medium Size Onions

Vegetable Oil

Green Chili Paste

DIRECTIONS

(A). Preparation To Green Kantola Recipe.

Chopped Kantola For Fry Recipe

Chop all Kantola in thin pieces lengthwise as shown in the picture. Wash all pieces and put them aside in a basket-shaped strainer. 

Chopped all onions in thin & long pieces. Then wash it and take it in a basket-shaped strainer to remove all water from onions.

(B). How to make Kantola?

STEP1

Making Tempering For Kantola.  Heat 1½ tbs oil in a thick bottom pan on medium heat. Add 1ts cumin seeds to the pan and stir it; allow till crackling/splutter. Then add asafoetida and instantly add chopped onion. Now slow down the gas flame and stirring nonstop sauté till the onion become tender, turns translucent or soft. Keep string continuously otherwise onion gets dark brown.                                         

STEP2

“For making a green chilly paste, take crush 1inch ginger, 6 to 7 medium garlic cloves; and 3 to 4 fresh green chilly in a grinder jar and grind to make a paste”.

After that add green chili paste, turmeric, spices powder; little salt to the pan, stir and saute the mixtures. Fry everything well until the raw smell has gone, oil starts to separate.

STEP3

Now add all chopped & drained Kantola, sprinkle remaining salt and stir it very well and cover the pan with its' lid. 

Keep stirring in between and let it cook for 25 minutes. Every five minutes you have to open the lid and stir it properly. 

Every five minutes of stirring periods are required in between to avoid masala and Kantola from being burnt. 

Check it until Kantola cook properly.  Check some Kantola by mashing them with a spoon or wired whisk. 

STEP4

Check the taste & salt if required. Sprinkle a few coriander leaves. Coriander leaves enhance the flavor of food.

STEP5

Now, take out all vegetables from the pan to your serving bowl and sprinkle the remaining coriander leaves over cooked veggies for garnishing.


Pro Tips:- For "Kantola" Recipes:

  1. When you chop the Kantola then remove the red seeds from it to more improve the veggies' taste.
  2. Avoid overcooking to maintain its taste and texture.
