STEP1

Making Tempering For Green Peas Veg.  Heat 2tbs oil in a pressure cooker & add cloves and cinnamon; stir & sauté till crackling. Then add asafoetida and instantly add onion paste. Now slow down the gas flame and stirring nonstop sauté till the onion paste turns translucent. Keep string continuously otherwise onion gets dark brown.

STEP2

Then add tomato paste and add salt as required.  Stir lightly for five minutes on low flame. After that add green paste, red chilly powder, turmeric, spices powder; and stir for two minutes. Note: if you found the mixture starts sticking to the pan then add some water and continue to sauté.

         STEP3

Now add all Green Peas and stir it for two minutes; add  2 glasses of water; stir it very well and cover the cooker with its lid. Pressure cook for 6 to7 whistles at medium flame. Then Switch off the flame.  When the pressure settles down on its own, open the lid & you will find the veggies are almost cooked. Check some peas by mashing them with a spoon or wired whisk. If you find that peas are a little bit hard then you have to pure some water in it and again cover the cooker, turn on the flame, pressure cook again for 2 or 3 whistles at medium flame.

     STEP4

If the consistency looks very thick, you can add some water and cook on medium-low flame till simmering in the veggies & get consistency. Check the taste & salt if required; sprinkle hot spices powder and few coriander leaves and put a suitable cover on the cooker. Put it aside for five minutes for seasoning. It enhances the flavor of food because of spices and coriander leaves.

     STEP5

Now, take out all vegetables from the cooker to your serving bowl and sprinkle the remaining coriander leaves over cooked veggies for garnishing.
