Quick and easy Stuffed Brinjal/Eggplant Recipe.
INGREDIENTS
- 250gm Brinjal/Eggplant/Baingan medium Size
- 2 nos. Potatoes
- 1 tsp Green Chili Paste
- 1tsp Red Chili Powder
- ½ tsp Dry Turmeric
Powder
- 1tsp Salt or as required
- 2 +1 tbsp Vegetable
Oil
- 1tsp Spices Seeds
Powder
- ½ Hot Spices Powder
- 1 Pinch Asafoetida
- 1tsp Sesame Seeds
- 2 tbsp Peanuts
- 1 tbsp Coriander Leaves
- 1 tsp Grated Coconuts
➢Roast peanuts and grind them along with coriander leaves.
➢After cooling it take it to plate, add all masala, pour
1tbsp oil, and mix nicely.
➢Wash all baingans and cut its’ half stalk as shown in the
picture(let stalk to 1 inch), remove the leaf from the surface of the baingan,
and cut on four sides till the top, as shown in the picture.
➢Fill these masalas with little pressure, into cut baingan
one by one, and keep it aside. As shown in the picture.
➢Now put the cooker on gas, pour 2tbsp oil, add a pinch
asafoetida, rest all Bharwa Baingan into the cooker and let it cook for 2
minutes.
➢After 2 minutes, add 1½ glass of pure water into it, and
cover the cooker with its lid. Pressure cook for 5 whistles at the medium gas
flame. Then Switch off the flame.
➢When the pressure of the cooker settled down itself, open
the lid.
➢Now Bharwa Baingan veggies are ready to serve.
