Undhiyu-is a special delicious food that is mostly cooked in the winter season, (Also, most people of Gujarat like to cook Undhiyu at festivals such as the Makar Sankranti-Uttarayan Festival) because related ingredients are mostly available in the winter season only. It is a favorable recipe for all wedding ceremonies during this period of time.

DIRECTIONS


(A)Preparation To Make Recipe Of Undhiyu.

  • Firstly, clean green beans(open up half of qty and remove seeds from it and half qty duly clean); wash all Green Beans (Desi Hari Small-Developed 3 Seeds Per Pod Of Papdi)  put it in one vessel, and put aside from it.
  • Then cut all vegetables into small pieces and take them with a wide vessel. Remember that we have to drain all the water from it. 
  • For making a green paste, take crush 1inch ginger, 6 to 7 medium garlic cloves; and 3 to 4 fresh green chilly and 2 tbs cleaned coriander leaves in a grinder jar and grind to make a paste. (see pic.below), keep aside this paste. 
  • Now take groundnut in grinder Jar and grind it in pieces form not in powder form. Take out this crushed peanut in the medium-size vessel and add all spices to it.

(B)Method of quick easy  Indian recipes. Easy Way Of Making Undhiyu.

STEP1

Making Tempering For Green Beans. Heat 2tbs oil in a pressure cooker & add Carum-Thymol(Ajwain) stir & sauté till crackling. Then add asafetida and instantly add Green Beans. Now slow down the gas flame and stirring sauté and put it as it is.

After that take one another pan and put it at next gas burner and start gas at it at medium flame, add remaining 2 tbs oil, heat it and add all vegetables in it and fry it properly and turn off gas flame and remove all these vegetables to that vessel where you keep aside mixture of spices and mix it well.

    STEP3


Now add all these vegetable mixtures in the cooker where Papadi is frying and mix it well and cook it till 5 minutes and then again stir it well and then add ½ glass of water, stir it and close the lid of the cooker. Pressure cook for 3 whistles at medium flame. Then Switch off the flame.  When the pressure settles down on its own, open the lid & you will find the veggies are almost cooked.

          STEP4

     

    After the cooker get cool open its’ lid and add the remaining chopped coriander leaves and
    Green Fresh Garlic – Hara Lahasun and take Undhiyu in a serving bowl.

One Tips To This "Undhiyu Recipe":
Serve Green Peas Papdi Masala Of This Undhiyu with flat-
round bread. You can serve it with Cumin-Rice Plus Karhi(Kadhi).
