INGREDIENTS

  • 1 cup Urad Dal
  • 1/3 cup Moong Dal
  • 1 tsp Salt or as required.
  • 1 ½ tbsp Green Chili+Ginger Paste
  • 2 cups Chilled Curd or as required
  • 1 pinch Asafoetida
  • 2 tsp Sugar Powder
  • 1 tsp Red chili powder
  • 1 tbsp  Coriander leaves
  • 1 cup Green Chutney
  • 1 cup Red sweet chutney

STEPS TO FOLLOW:

Take 1 cup Urad Dal, and 1/3 cup Moong Dal in one vessel; mix it and wash properly two three-time.

Now take good amounts of pure water and fill in the vessel, more than 1½ inch of that mixture level, cover it, and soak it overnight.

After that, strain all water from it; wash it, and smooth grinding half-half quantities 2 times, in a mixer by adding 1 or 2 tbsp water both times.

Take all these ground mixtures in a separate bowl, ferment it in one direction continuously for five-seven minutes till its colors change to light white, and then add green chili paste and mix it well.

The mixture is required to little bit thick to make vada. For checking the readiness of the mixture put the small ball from mixture to water glass, if that mixture comes out itself then the mixture is ready to frying vada.

Now, take one bowl, add salt, add 1 pinch of asafetida in it, and mix it nicely.

After that put one pan on a low-medium flame of gas, add the required oil to deep fry Dahi Vada, soak your hand with water, and make a small ball from the mixture. 

Start frying dahi vada till golden color. If you want to fry that vada two times then firstly half fry it and after cooling the second time till getting a golden color.

After frying all Dahi Vada, soak it all into saltwater which we already prepared, for 15 to 20 minutes.

During this period of time start making chilled curd. For that staring the curd by strainer properly and mix well 2 tsp of sugar powder.

Now, drain water from individual Vada by squeezing smoothly.

Take a serving plate and put required vada, pour required curd over it, sprinkle red chili powder, green chutney, red sweet chutney, and little coriander leaves over it.

This delicious dish is ready to eat.
